Long story short I missed grilled steak but at the price of beef I can't do it.
When we moved into our house and I got my grill set up and seasoned I went looking and found lamb was far cheaper than beef.
This week, starting tomorrow, Sprouts is selling lamb shoulder chops for $2.99 lb. Sometimes Albertsons has them on the cheap as well just not this week or this low.
Forget all the foo foo Mediterranean/Greek recipes for lamb and just buy these trim the fat off and grill them up.
A little salt, pepper, mesquite seasoning and do about 3min per side until the temp is 135-140. Let them rest and eat them up.
The shoulders do not have the strong gaminess of some lamb cuts and per the owner of a middle eastern market shoulders are the best tasting cut off of a lamb. They are well marbled like ribeyes, bone in, and so good I can't believe they go so cheap.
To be fancy mince some fresh rosemary leaves, sprinkle half on the bottom of the plate, drop the lamb onto the plate sprinkle the rest and let it rest 5 minutes before cutting.
Save you steak knife edge and put a paper plate on top of the ceramic one to act as a "cutting board" buffer and stop at the bottom of the meat. Do not grind your blade against the plate.
I know what I'm having tomorrow for dinner.
Yeah not seafood related but cures that red meat craving for skinny money.
