Rack of Pork

Got this Rack of Pork from Costco ( seasonal ) and put a nice rub on it , in the smoker it went at 225 for 2.5 hours. I used apple chips and it turned out great. After letting it rest for 20 minutes I cut it up and it was FANTASTIC 8) 8) 8)

Damn, that looks good.  Do you use an electric smoker or a pellet smoker?
You can't catch them from your computer chair.

Those are only at Costco during the holidays. Was going to do the exact same thing Tim.

Nice work. Might have to give this a try. Did you have a target internal temp before taking out?

  145 degrees internal temp

Tuned out fine but took a bit longer than yours. End chops are like 2 meals worth. I usually do the whole boneless loins this is that just with a handle on it.
