Smoked Trout, Yellowtail, and Steaks

I tried 3 different recipes on this smoker batch. Butcher butter steaks, southwestern Yellowtail, and peppered bourbon/brown sugar Rainbow trout. All came out as tasty as expected, but the fish was definitely more on point!

Butcher Buttered Steaks, Bourbon and Brown Sugar Trout, and a South Western Yellowtail.



Wood was Apple and Cherry.

What we didn't eat, I vacuum sealed for another day!



No orange food dye needed this time.  LOL

Did the steaks get any fish flavor? Vice versa? Never really used a smoker, so not sure how that would work.

Nope, smoker makes everything taste like smoke. I also put the meat on the top rack so no fish dripped on it.

The yellowtail was awesome!



The smoke ring and tenderness was spot on!
