Super pasta sauce concentrate..

I grew up cajun/italian. Spaghetti and meatballs and gumbo are my comfort foods.

Probably because of this I make spaghetti sauce super thick.

Caramelize 2 big onions until darker than peanut butter and just a sticky sugary glop. Brown 1 lb of sausage, 1 1/4 lb ground Bison, saute more onions, bell peppers, garlic, add onion glop, meats, bag of turkey meatballs, 2 fistfuls of chopped mushrooms, 2 jars of good store spaghetti sauce, 2 cans diced good tomatoes, jar of roasted red peppers, Italian seasoning, fennel seed, oregano, thyme, cayenne, crushed red pepper, basil and 2 bunches of green onions.

Spoon needs to stand up in it. Yields about 1.5 gallons and you eat it for about 30 meals. As my dad would say put lead in your pencil, hair on your chest, and burns the hair off the top of your head.

Now we're talkin'.  You mentioned two of my favorite things: gumbo and bison.  I like thick sauce too, and I usually make big crock pot or dutch oven recipes and freeze left overs.  I'll have to give this a shot.

If you like bison call Whole Foods in La Jolla. They sometimes have fresh bison cuts. There is nothing on earth like a bison ribeye.

I use 2 spoons this and one spoon jarred thin sauce and enjoy.

Mmmm yum. I do mine in a similar way. Lots of veggies and cook till its almost like chili...

Too much sauce, but that's actually good enough to satisfy my cravings.
