Man, thanks to Phong, I got 6 beautiful yellowtail collars all ready to cook up for my folks during their visit.  The prep was simple since the condo where my folks stay does not have great kitchen amenities. 
I brought some balsamic vinaigrette and some poultry rub.  I put the collars in a bag with about 1 cup of BV.  I turned the bag in the fridge every 10 minutes or so for about 30 or 40 minutes. 
I preheated the grill to about 400.
I pulled the collars out and lightly coated them with the poultry seasoning (Good grade of seasoning)

I grilled on one side for about 25 minutes with the cover alternately down and up every 10 minutes or so to make sure the collars weren't getting over cooked.



I use my dad as a gauge as he is more of an upclass diner rather than a food inhaler and absolutely loved it.  I have to say, for such simple ingredients, it was pretty damn good!



The view also helps out pretty good.  LOL
You can't catch them from your computer chair.
