Macadamia Mahi Stuffed Avocadoes

Well, I went to make the same fish I made yesterday for lunch today but saw a bunch of avocadoes sitting on our counter.  I remember making stuffed avocadoes before, but couldn't remember the recipe, so decided to try something with the ingredients I was currently using.

I did the same recipe as my crusted filets, but instead diced a bunch of mahi, coated it in flour, dipped in egg and mixed with the remaining nut/panko mix. (I also added some green onion from my garden)

I seared it in the pan making sure it was broken up and stuffed it in the avocadoes and put some of the soy ginger drizzle over it.  They were fantastic!  My wife loved them and even my granddaughter ate an entire one!  I call that a success!
