God, for years I have always cooked some nice beef and pork, but reveled in my knack for cooking seafood.  Realistically, I was always better at seafood since my mind deals with minutes over hours and I feel like seafood fits my brain's time mode of minutes much better.

Since my back was surgically repaired, I got to watch some TV that I normally would not spend too much time to watch.  I saw BBQ Pit Masters and wanted Pork Ribs!!!!

I actually took the time to write down the process and went out to buy some ribs to try for myself.  Normally, it would need to take less than an hour for me to even want to cook these things, but I had more time on my hands than I wanted to have.

I started with a dry rub... and added a little moisture...



5 hours later, I was dealing with a product that I was dreaming about...



I am not a very patient man. but will try and become more patient knowing that it will pay off with the best ribs you could imagine!



Not fish... but so much better... If I had 5 hours to cook every day!  In the meantime, I will just keep on with my seafood.  I will keep this in the back of my mind since it was so awesome and out of my league since I'm not a big Meat Cooker... but may start to be more.   8)

We must do this with a PS BBQ though.  I don't have much patience for cooking meat for 5 hours, but now I realize why these BBQ guys weight 400 pounds and cook such great meals!  Wow is this good!!!!

Holy $#!t that jus made my mouth water! Looks bomb boss, my uncles, ones white from Alabama and ones from the IV and not white or Hispanic or islander lol they both make some ridiculous ribs, both southern style and seriously the process takes the better part of 6-7hrs. But the end result is fall off the bone ridonkulousness! It's like soakin bait, you know when you get what your waiting/working for its gonna slap you in the mouth and leave a grin on your face B)

The ultimate for most of us who don't have the time or patience to futz with a Weber or Offset is an electric wood pellet smoker. Two of my friends have them and I'm here to tell you I'm jealous. You can trim/debone/brine/marinade/dry rub your meats in minutes the night before and let them get happy over night like normal, but when it comes time to cook all you have to do is fill the drip pan with water, add pellets, set your time, temp and forget about it.

No futzing with adding more charcoal, and wood. No worrying about temperatures, rotating, basting, blah, blah, blah. You can still use a Texas crutch, but you usually don't need to. Especially for brisket! You can put those bad boys on in the Morning when you make your coffee and pull them 9-12 hours later when your guests arrive and it's perfect every time.

You don't have to spend an insane amount either, $250-$350 will get you a great unit from Home Depot with an internal meat thermoter;D
